Caramelized Onion Hummus

Being vegan definitely means I eat a ton of hummus. I use it for dipping veggies and crackers, put it in sandwiches and snack boards, and so much more! It’s an easy and healthy addition to any snack. There is nothing I love more then homemade hummus, its so simple to make yet super delicious. If you are visiting a friend I love bringing something homemade it adds a personal touch. Caramelized Onion Hummus

Ingredients

  • 2 cans of rinsed drained chickpeas
  • 4 cloves garlic
  • 2 tsp cumin
  • 1 tbsp paprika
  • 1 tsp powdered garlic
  • 1/2 cup tahini
  • juice from one lemon
  • 1/4 cup extra virgin olive oil
  • 1/4 cup cold water
  • 1 tsp salt and pepper
  • 1/2 yellow onion

Directions

Rinse and drain 2 cans of chickpeas. Add chickpeas to a pot with 4 cloves of garlic add just enough water to cover the chickpeas and bring water to a boil. Once water has come to a boil simmer for about 10min. Then drain water. Put the drained chickpeas and garlic into the pot and add spices- 2 tsp cumin 1 tbsp of paprika 1 tsp of powdered garlic, 1/2 cup of tahini, fresh juice from a lemon, 1/4 cup olive oil. Add your pre made caramelized onions into the pot. Mix everything in the pot let sit covered for 15 mins. Once cooled add everything to a food processor and add about 1/4 cup of cold water and 1 tsp black pepper. Mix in food processor, add more cold water as needed to make thinner if desired. Taste and add more spices to your liking if needed. Store in the fridge in an air tight container.

Caramelized Onions

Dice 1/2 a yellow onion, heat a pan with 2 tbsp of olive oil. Sauté in the pan on medium heat stirring every few minutes. Reduce the heat to medium low and stir every couple of minutes for the first 30 minutes. If the onions stick or look like they’re burning, add a few tablespoons of water  as needed to rehydrate the onions and use a spatula to scrape the browned bits off the bottom of the pan and back into the onions. Cook for about 45 min or until they are cooked to your liking.
