Vegan Mexican Street Corn

With Cinco de Mayo approaching I wanted to share some of my favourite vegan Mexican recipes. Even before I went vegan I loved Mexican food; it’s so fresh and delicious. Mexican is one of the easiest cuisines to make vegan. My sister Laura who is also vegan made this corn awhile back, and once I tasted how yummy it was, I knew I had to get the recipe from her and share it! I love corn with a big Mexican meal it’s the perfect side! This year Cinco de Mayo lands on Taco Tuesday!! So what better way to celebrate then with some delicious Mexican dishes, including Laura’s famous Vegan Mexican Street Corn!

Laura’s Famous Vegan Mexican Street corn

Laura’s Famous Vegan Mexican Street Corn

Ingredients

  • 2-4 corn on the cob (with the husk still on)
  • 1/4 cup of vegan mayo (we used Hellemann’s)
  • Juice of 1 lime
  • 2 cloves of garlic
  • 1TBSP of nutritional yeast
  • 1 tsp of paprika (plus a bit more to sprinkle on top)
  • Salt & Pepper to taste

Instructions

Preheat your oven to 350 degrees F put the corn in the oven with the husks on. Let the corn cook for 40 min. While the corn is cooking mix everything for the sauce in a small bowl. One the time is up remove the cooked corn along with the husks. Once the corn has cooled for a few minutes brush the sauce on (make sure every side is covered). Let cool for another 5 min with the sauce on and then enjoy!!!!
