To say I’m obsessed with avocado’s is an understatement, I could eat avocado toast everyday and not get tired of it! Every time I have been to Mexico for a holiday I always have to have the guacamole- they usually make it right at your table. It tastes so fresh, and there are so many different things you can use it for- chips obviously, on toast, in a sandwich, or burger, or even in a salad. With Cinco de Mayo coming up what better time to share the best homemade guacamole recipe with you!!

This guacamole recipe is of course vegan, gluten free super easy to make, and is sure to be a favourite at any party. I have made guacamole tons of times and over the years I have perfected the recipe. It’s fresh and bright and easy to customize to your liking- feel free to add or take away ingredients- if you like it spicy add some chopped jalapeños and maybe a dash of cumin. People either hate or love cilantro I personally like it in my guacamole but its all up to you!!!! This recipe makes enough for about four people.
The Best Homemade Guacamole
Ingredients:
- 2 ripe avocados
- 1/2 Roma tomato (cored and chopped)
- 1/4 red onion (chopped)
- Juice of one lime
- 2 cloves of garlic ( use a garlic press)
- Salt & pepper to taste
- Optional green onions jalapeños & cilantro to sprinkle on top

Instructions
Mash the avocados (leave a few chunks in tact for more texture). Chop all the vegetables and mix with the avocados, then add your seasoning and garlic! This is perfect to pair with tacos and our vegan Mexican street corn for an amazing Mexican meal. To store the guacamole put in an air tight container and put a piece of plastic wrap directly on top of the guacamole to prevent from browning, it should keep for about a week.
