Vegan Tacos Three Ways

When Cinco de Mayo falls on a Taco Tuesday that’s reason for a celebration!! This week I have made a bunch of vegan Mexican dishes like our homemade guacamole and Mexican street corn and wanted to share the recipes with you, so you can have a big Mexican vegan meal for Cinco de Mayo. Tacos have always been a favourite of mine- in todays post I decided to make three different types. One is a ground “beef” taco using Gardein beefless ground, a baja fish taco using Gardein fishless filets, and black bean tacos. These tacos are easy to make, delicious and there are so many options for different toppings!!! Keep reading for my favourite vegan tacos three ways!

Vegan Tacos Three Ways

Crunchy Fried Corn Tortillas

Fried crunchy corn tortillas will definitely up your taco game trust me. These are so simple to make at home so before we get into the taco recipes I’ll show you how to make these.

Ingredients

  • 1 package of Corn Tortillas (we used the smaller ones)
  • 1cup Vegetable Oil

Instructions

Heat the vegetable oil in a pan on medium heat for a few minutes. You can check that it’s ready by putting a bit of flour in the oil, and if the oil bubbles up then you can start frying your corn tortillas. Put one tortilla in the oil at a time. Leave for about 10 seconds and then using tongs flip it to the other side let cook for a few seconds on that side. At this point while the tortilla is still soft use tongs to fold it over to make a taco shape (hold the tongs in place to keep the shape while you finish frying). You can flip the corn tortilla a few more times to get it golden brown. Once done place on a plate with some paper towel and fry up the next one!

Up your taco game with the crunchy fried corn tortillas

Vegan Baja Fish Tacos

These tacos taste like authentic Baja Fish Tacos thanks to the Gardein fishless filets we toped them with a homemade crunchy coleslaw and put them inside fried corn tortillas.

Ingredients

  • Gardein fishless filets (one filet per taco)
  • 2 cups of shredded purple and green cabbage
  • Cucumber
  • 4 TBSP of vegan mayo (we used Hellemann’s)
  • 1 tsp of red wine vinegar
  • salt and pepper to taste
  • corn tortillas (see above recipe on how to fry them)

Instructions

Preheat the oven to and cook the Gardein fishless filets according to the package instructions. While fish are cooking make the cabbage coleslaw, add the vegan mayo red, wine vinegar, and seasonings to the shredded cabbage and chopped cucumbers. Once the filets are cooked and golden brown add them to your crunchy tacos shells and top with the slaw.

Vegan Baja Fish Tacos

These tacos taste like authentic Baja Fish Tacos thanks to the Gardein fishless filets we toped them with a homemade crunchy coleslaw and put them inside fried crunchy corn tacos.

Beefless Tacos

Trust me when I say with these tacos you won’t be missing the beef! I have also made a homemade taco seasoning that packs tons of flavour!

Ingredients

  • 1 package Gardein beefless ground
  • 2 TBSP of olive oil
  • 1 TBSP of chili powder
  • 1 tsp of garlic powder
  • 1tsp of onion powder
  • 1 tsp of ground cumin
  • 1 tsp of paprika
  • 1 tsp of oregano
  • 1/4 tsp of chili flakes (depending on how spicy you like things)
  • 1/4 tsp of salt
  • 1/4 tsp of pepper

Instructions

Heat the olive oil on medium heat and sauté the beefless ground (if its frozen break it up with a spatula). Cook for a few minutes then add the season on top. Add filling to the fried taco shells and top with our homemade guacamole, shredded lettuce, vegan cheese and your other favourite toppings!

Beefless Tacos

  • 1 tsp of chili powder
  • 1 tsp of cumin
  • salt and pepper to taste

Instructions

Heat the black beans on medium heat for a few minutes, use your spatula to crush up some of the beans. Add in your seasonings stir. Then add into your crunchy taco shells top with our homemade guacamole and your other favourite toppings.

There are so may toppings that you could do for these tacos I love my homemade guacamole, pico de Gallo, shredded lettuce, green onions and vegan cheese- the sky is the limit!!!
