In today’s blog post I’m bringing you a delicious fresh take on salsa, and this recipe is perfect for summer. I collaborated with @simplyrealhannahb she made the salsa, and I made the peach & pink lemonade punch. These two recipes go perfect together, and are great to serve at a summer gathering. Grilled Peach Salsa
Ingredients
- 4-5 ripe peaches
- 1/2-1 red onion
- 1 red pepper
- 1 yellow pepper
- 1 large tomato
- A handful of fresh basil
- 1 jalapeño
Dressing:
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- Juice of 1 lime
- 1 tsp paprika
- 1 tsp cumin
- Salt & Pepper to taste
Instructions
1. Cut onion in half, and peaches into halves or quarters. Add pieces to a bbq on med/high and grill until slightly charred and soft.
2. While grilling, dice the rest of the produce. The chop size/measurements of the produce are just a guide! Add, take away, you do you! For this recipe, we roughly chopped everything into small chunks.
3. Remove peaches and onion from the grill and chop as well. Add to the rest.
4. Whisk together dressing ingredients and add to the mixed produce. Toss well so everything is incorporated.
5. For best flavour, let the salsa sit for at least 15 mins or overnight to let everything soak together!6. Serve with chips, Peach & Pink Lemonade Punch, and grab some sun – enjoy!!
